Lauren’s Cajun Sausage Potato Soup 🥣🔥

Ingredients
  

  • 2 Pkgs Beef Smoked Sausage (can use any smoked sausage)
  • 3 Baked Potatoes (450°F for 1 hour, peel after cooling) Optional 1 small bag potatoes boiled until tender
  • 1 Sweet Yellow Onion, chopped
  • 6 tbsp Butter
  • 2/3 cup Flour
  • 6 cups Chicken Broth
  • 1 pint Heavy Whipping Cream (skinny Option sub half and half + 1 Tbsp arrowroot mixed in with cold water to thicken)
  • 1 tbsp Garlic Powder
  • 6 shakes Worchestershire
  • 4 shakes Tobasco
  • 1 tsp Oregano
  • 3 tsp Thyme
  • 3 tsp Smoked Paprika (maybe more - I really sprinkle till I feel good on all seasonings)
  • 1/2 tsp White Ground Pepper
  • 2 tsp Nature's Seasoning
  • 2 tsp Salt
  • 1 tsp garlic salt this is to taste

Method
 

  1. Bake potatoes (can be done the day before!) or boil them.
  2. Brown sausage; remove.
  3. Sauté onions in butter, after they soften, add all seasonings, Tobasco, and worchestershire
  4. Stir in flour; doesn't have to brown, just until mixed into a roux.
  5. Whisk in broth; add seasonings.
  6. Add potatoes + sausage; simmer low.
  7. Add cream + cheese (do NOT boil).
  8. Season more to taste.
  9. Optional toppings: cheese, bacon, green onions, parsley, croutons, sour cream, extra hot sauce.
