Lauren’s Creamy Cajun Potato Soup (Easy One-Pot Comfort Food)

Okay listen 😅 — this soup is one of those recipes I reach for when I’ve been running my business, running my household, and sometimes my mouth 😂 — all while trying to get my body back to a place that feels strong and GOOD again.
I’m in my weight-loss comeback era — loving my workouts, still loving my treats, and choosing balance over burnout. And this Creamy Cajun Potato Soup fits this season of life perfectly. It’s cozy, creamy, smoky, a little spicy, and legitimately SO easy. Busy-mom dinner magic. One pot. No stress. Big flavor.
And because we’re all about real-life balance around here, this recipe has options:
-
Go full comfort with cream and cheese? YES.
-
Lighten it up? Also YES.
-
Do whatever feels good today.
This soup never disappoints. Ever. 🖤
Just Keeping It Real 🖤
Quick heads up — you won’t find perfectly curated, magazine-style cooking photos here. You’ll find real food, made in real time, in a kitchen that’s usually mid-mess.
I’m a business owner, a homeschool mom, and the CEO of organized chaos. If the lighting isn’t perfect or the cheese pull isn’t Pinterest-level… just know the soup was GOOD and we all ate. 😅
If you’re looking for perfection, this probably isn’t your place. If you’re looking for real life, you’re exactly where you belong. 🖤
PS: I was absolutely running on fumes when I made this.
Y’all saw it on my stories, asked for the recipe, and I’m never going to gatekeep good food. I’ll snap photos the next time I make it — but until then… enjoy. And trust me — it’s GOOD. 🖤

How to Make Creamy Cajun Potato Soup
1. Time-Saver Tip
Bake your potatoes the night before. It makes dinner ridiculously easy and deepens the baked-potato flavor.
2. Brown the Sausage
Cook sausage in a large pot until golden. Remove to a plate and set aside.
3. Build the Flavor Base
Add butter to the sausage drippings. Sauté onions with Nature’s Seasoning until soft and smelling unreal, then add all spices, Worcestershire, and Tabasco. 🤤
4. Make the Roux
Stir in the flour and let it lightly brown.
5. Add Broth
Slowly whisk in chicken broth until smooth.
6. Add Potatoes + Sausage
Add your baked (or boiled) potatoes and gently break them into the soup. Stir sausage back in. Simmer on low — do NOT boil.
7. Add Cream + Cheese
Stir in heavy cream and Colby Jack until velvety and perfect. Taste, adjust, and trust yourself — like the kitchen legend you’re becoming 😌✨
